Good morning everyone!

Despite the continuing ugly weather, I’m determined to have a good day and get stuff done! I have a sociology midterm on Tuesday and reeeally need to get crackin on studying. I’m about 4 chapter into my book, but I have a lot to go! Wish me luck 😛 My grandma is picking me up today and I get to spend the night at my aunt’s. Yay! And help take care of my awesome cousin Max. Cutest boy ever!

So I’m going to rewind back to last night’s dinner. I was suuuper excited that I had a baking sheet finally, and since I had so much time I decided to make something that I’ve missed incredibly.

Sweet potatoes!!! Wow. I forgot how freaking good these are baked. Seriously, microwaved sweet potatoes have NOTHING on oven baked! I debated cutting them into fries but then decided to make them cheetah style. Except mine didn’t get all spotted. Not really sure why! They were delicious nonetheless.

I also had a few rando pieces of broc and cauli. And what is in that bowl you may ask? It’s a mix of Dijon mustard and plain yogurt. That’s it. Sounds weird, and looks a little nast, but I promise it’s amazing! It’s so nice and sharp and creamy, and works really well with the sweet potatoes. Try it! Mucho hot sauce was also added.

The last of my hummus was also consumed. This jar did not last very long! One of my favorites I’ve had in a while. Hummus and hot sauce is really one of the best combos out there. On a sweet potato. Must remember to pick some up today.

A little after that, some friends and I made cookies!!! It was awesome. I just miss the act of baking. But hot and gooey chocolate chip cookies didn’t hurt either 🙂 And we of course shared with other people in the basement and they were very appreciative. I think everyone misses any kind of hot and homemade food. They all loved it! I think it’s funny when people are so amazed at someone’s ability to cook. They just couldn’t believe we’d made cookies from SCRATCH. What a novelty!

After some baking and chatting for a few hours in the basement, a couple friends and I went to a friend’s room to watch a movie. Im’ pretty sure we started it at 12:45. Haha. I went to bed around 3. Gotta love college. I had a fun night staying in and chilling with everyone though. No one was in the mood to go out since it was just way too freakin cold and wet. Next weekend perhaps?! And definitely Halloween weekend!! Speaking of which…I still need to think of a costume. Any ideas?!?!

I woke up at 9 this morning. This is so great for me. Seriously. I have trouble sleeping past 8. So I was super excited when I looked at my phone and saw the time. I got myself out of bed and had a delicious bowl of oats (what else?).

1/2 c oats, 1/2 c almond milk, 1/2 c water, 1/2 banana, cinnamon all chilled out and had fun overnight. This morning I added a bit more water and micro’d for 3 minutes total. Topped with some muffin and sprinkled with cinnamon. And of course a pb spoon. Great as always! And so creamy thanks to the return of the almond milk. It makes a world of difference.

For some reason I’ve been a little hungry after my oats lately, so I remedied the situation with this:

Yum. Except now I kind of a stomach ache. Too much sugar this morning? I think yes.

Well, I’m off to pack up stuff to go to my aunt’s and get ready and such.
